Deep in the mountains of Omkoi, Chiang Mai, lies Ban Khun Tuen, a remote highland community surrounded by cool air and dense forest. Coffee here is commonly grown at around 1,300 metres above sea level, beneath the shade of larger trees rather than on open, industrial-style plantations.
The farmers work closely with the natural environment. The forest provides shade, protects the soil and allows the coffee cherries to mature slowly. Catimor is one of the main varieties grown in the area, although some Khun Tuen farms also cultivate Typica and Bourbon.
For this coffee, the ripe cherries undergo the natural process. Instead of removing the fruit immediately, the whole cherries are carefully dried with the seeds still inside. During drying, fermentation takes place within the fruit, contributing sweetness, fruit character and complexity to the final cup.
The result is a coffee that reflects both the forest and the patient work of the community: floral aromatics, ripe tropical fruit and dried-fruit sweetness, often expressed as lavender, mango, prune or dried dates. The exact flavours will change according to the harvest, processing and roasting style.
Omkoi Khun Tuen is more than simply a Thai coffee. It tells the story of a quiet mountain community transforming locally grown cherries into a distinctive specialty coffee—one harvest, one drying bed and one careful selection at a time.
