Elver's innovative approach to processing sets his coffee apart: 1. Natural Process: Cherries are floated in tanks immediately after picking, then dried on raised beds for 25-35 days. 2. Washed Process: Cherries rest overnight, are pulped in the morning, then undergo an extended 48-72 hour fermentation due to the cool climate. Drying takes 10-14 days on raised beds and tarpaulin-lined patios.
