The forest provides shade, protects the soil and allows the coffee cherries to mature slowly. Catimor is one of the main varieties grown in the area, although some Khun Tuen farms also cultivate Typica and Bourbon. \u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003eFor this coffee, the ripe cherries undergo the \u003cstrong\u003enatural process\u003c\/strong\u003e. Instead of removing the fruit immediately, the whole cherries are carefully dried with the seeds still inside.
